Super exhausted this morning, but thankfully Adam was up and awake and made eggs & bacon for himself (and bacon for me!).  He's having a hard time with the eggs, though.  He only likes them scrambled and without butter or milk, the taste and texture is off.  I told him to use butter next time, so maybe that will help.


Breakfast: eggs and bacon for him, leftover frittata and a slice of bacon for me


Snack: nuts


Lunch: Chicken stirfry (w/a little jasmine rice and splash of soy sauce)


Snack: wine


Dinner: leftover pork chop + green beans for him

Well, I haven't been keeping up with this food log AGAIN!  It's so hard to find the time to do anything other than work, cook, and take care of the baby (who has been teething for the past THREE months!!).  I'm hoping things will calm down a little once her teeth break through, at least enough for her to be okay being held by someone other than me.

So, enough belly-aching and back to the topic of this blog... paleo food.  To be perfectly honest, we fell off the wagon big time last week.  Between the baby, hectic work schedule and my dog being violently ill (and puking SEVEN times in one day), I was weak and I have no shame in admitting it.  When you're first trying to change a lifestyle, there will be pitfalls.  The important thing is that we're back on board and miracle of all miracles, my husband was anxious to start back with the paleo diet again.  He was complaining about how awful he felt after our non-paleo meal choices.  I even heard him excitedly talking to his mom & grandma about it during their visit yesterday.  I'm so happy that he's happy with this because I definitely want us on the same page since our daughter is getting much more interested in what we're eating now and is almost to the point where we will start sharing some food with her.

So, meals for today:


Breakfast - smoothie for him; leftover frittata for me (I made a big frittata on Sunday morning that I could get four breakfasts out of - 6 eggs, 1/2 green pepper, leftover garlic pulled pork from Saturday, 1 onion, 1/2 zucchini)

Snack - cashews for me and about 4oz. of the smoothie Adam made.

Lunch - leftover pork chop from dinner last night + leftover chili for me,
Meat sauce with penne (despite the fact that I heated up a pork chop for him! ugh)

Snack -cashews, wine, no sugar added applesauce

Dinner - 2 eggs, 2c. baby spinach, fried in bacon grease for me,
Leftover outback steak + steamed broccoli for him

Snack - 1 tangerine, handful of dark chocolate chips

I know we'll probably have many more stumbles along the way, but I don't expect us to be perfect and want to allow for "cheats" every once in awhile.  I was so overwhelmed with cooking three meals/day and planning for snacks along with additional stress of work/baby/dog that it was nice to just be able to let it go for a bit.

That being said, I came across this post on Robb Wolf's site and the hubs and I plan to start doing better with prepping easy meals for the week on the weekends.  This should help take some of the pressure off me during the week if we're having a particularly hard day or something.

Paleo Challenge Day 8

Well, I'm definitely disappointed in us for our eating this weekend.  I wish we would have tried harder on Saturday, but what's done is done.  Time to move on to a new week!

I must get some food prepped tonight for the week or I'm going to set us up for failure again.  If only I had more hours in the day!! :)

3 slices bacon, 4 squares of 85% chocolate, black coffee, 3oz. smoothie (Me)
1 slice bacon, 16oz. smoothie (Him)

Lunch:
steak (marinated with garlic & balsamic vinegar) & asparagus (lemon juice, salt)

Okay, we are going to lunch with some friends of ours today, so the food may not be 100% paleo, but we will do our best to make good choices today (have to make up for the splurge of yesterday).

Breakfast (Me):
Black coffee
2 eggs, over easy
1c. spinach (in bacon grease)
2 slices bacon

Breakfast (Him):
2 eggs, scrambled in EVOO
2 slices bacon
4oz. OJ/Pineapple

Lunch (Me):
8oz. steak w/ grilled fruit (2 slices of banana, 2 slices of apple, 2 slices pineapple)

Lunch (Him):
5oz. steak, 3 scrambled eggs, 1/2c. steamed broccoli


Snack (Him):
1 orange
1 lemon Larabar
dried apricots


Snack (Me):
black coffee
3 slices, dried peaches

Dinner (Me):
1 orange
2tbs. walnut butter
handful of salted/roasted cashews

Paleo Challenge Day 6

Well, we were bad on Day 6. Went to lunch with my parents at a BBQ place and we both caved on the sides (partly b/c we knew we would have to cheat that night at a family Christmas gathering).

Breakfast (Me): black coffee

Lunch (Me):
Pulled pork sandwich w/ mac'n'cheese, cole slaw and hush puppies
(No bread, but still)

Lunch (Him):
Pulled pork sandwich w/mac'n'cheese, some french fries and hush puppies

Dinner (Me):
Turkey, ham biscuit, mac'n'cheese, green bean casserole, sweet potato casserole, meatloaf casserole, mashed potatoes, 1/2 brownie, strawberry whipped dessert, apple cake slice.
(this sounds like a ton of food, but it didn't even fill up a plateful, it was basically just tastes of everything... not trying to justify the bad food, just wanted to note that it wasn't a heaping serving of each)

Dinner (Him):
Turkey, ham biscuit, roast w/gravy, mashed potatoes, roll, strawberry whipped dessert, 1/2 brownie

He did much better than me, except for the bread.

Snack (Me):
two handfuls of raisins and jonesin' for some more brownie - UGH! I knew I'd pay for that indulgence

Woke up late this morning and didn't really feel like cooking breakfast (laziness setting in after a long night with the baby!)

1/2 avocado
1/4 gala apple (baby chewed on other 1/4 making it slightly unappetizing)
1tbs. homemade walnut butter
4oz. smoothie

Breakfast (Him):
Smoothie

Snack (Me):
Ham (2oz. or so)
2tbs. walnut butter

Lunch:
2" thick pork chops w/salt, pepper, and Italian herbs blend cooked in garlic flavored olive oil and chicken stock
steamed broccoli
salad w/cucumber & carrots & balsamic vinaigrette

Snack (Me):
walnut butter
coffee
2oz. ham
lots of unsalted/roasted cashews (HUNGRY!!)

Snack (Him):
nabs, he forgot to take something

Dinner:
Breakfast for dinner, YUM!

Paleo Challenge Day 4

STRESSED with work these past few days and seriously craving some comfort food because of it.  Adam is really struggling with only drinking water, but doing great otherwise.  I'm doing better with my plain water and am really thirsty all the time, but craving sweets something fierce!


Breakfast (Him):  Smoothie, same as yesterday

Breakfast (Me):
1 banana
2 eggs, over easy
2 slices bacon
1/2c. spinach cooked in bacon grease
black coffee


Snack: (Me)
clementine
roasted pecan butter (~2tbs.)
1/2c. no-sugar applesauce

Snack (Him):
2oz. chicken breast

apple


Lunch (Me):
Spicy chili chicken soup, leftover


Lunch (Him):
2 leftover hamburger patties
salted cashews


Snack (Me):
2oz. turkey breast
salted cashews (~1c. - BINGE!)


Dinner:
Not sure, either spaghetti squash with meat sauce (Adam has refused to eat this)
or maybe something like sausage patties w/green peppers & onions
or shrimp over spinach salad - wish strawberries were in season

Alright, making myself hungry, need to get off the computer.

Dinner ended up being shrimp roasted with olive oil, salt and pepper then coated in chili garlic sauce. I ate zucchini fritters as well (1 zucchini, 1 egg, 1 slice of bacon). I don't think hubs was crazy about this dinner. He made the comment tonight that he's done with eating vegetables.  Uh oh! :)

Paleo Challenge Day 3

Adam had some pep in his step this morning!  It was great to see:).  He got a bunch of sleep last night, so I think that helped (and it meant he wasn't up watching tv and thinking about being hungry!).


Breakfast: Me
1 banana
lots of black coffee
~4oz. chicken breast, leftover from chicken fajita on Monday
1/2 gala apple
1/4c. raisins + 1/4c. roasted walnuts/hazelnut
4oz. of Adam's smoothie


Breakfast: Him
Smoothie with 1 banana, strawberries, egg white protein powder, green tea, fish oil, & flaxseeds


Lunch:
Chicken Chili Soup (courtesy of EverydayPaleo.com) minus the cilantro plus spinach (about 1c.)
2 tbs. pecan butter (Kate)


Snack:
Turkey breast, roasted pecans (Kate)
Larabar, clementine, apple (Adam)

Cooking dinner snack (Kate):
dried cranberries


Dinner:
Beef stirfry (marinated steak,vfrozen veggie mix) w/sesame oil, and have to figure out some kind of sauce (maybe chili garlic?).

Paleo Challenge Day 2

Woke up in a great mood this morning! And I went to bed semi-early (it's actually late for me, though!) last night at 9PM, so I didn't have the evening cravings like I normally do. I think the blueberries helped with that.

Adam had a hard time with being hungry. I think he's not eating enough (especially fat). I have to say, though, I'm so proud of him for not having any beer last night despite there being a Hokie game on tv! Those kind of habits are the hardest because they are more mental than physical.

We didn't get around to taking pictures or measurements last night since we were a bit rushed in the evening with going to see my niece for her 5th birthday and the subsequent meltdown by Isabelle for being out of the house near bedtime.  I plan to do it this afternoon before we get too far into the 30 days!  Our track record would be to finally get around to it on day 15:).

Breakfast:

2 slices of bacon
2 eggs (mine over easy, Adam's scrambled)
1c. spinach cooked in bacon grease (Kate)
black coffee (Kate)
4oz. OJ/Pineapple (Adam)

Mmm... I always forget how good a creamy yolk is!  I plan to not have this same breakfast every day, but eggs and bacon are just so darn easy and good.  Maybe I'll try to do chicken and apples tomorrow.  Adam will probably do a smoothie.

Snack:
Clementine

Lunch:
1/4lb. beef patty (egg, s&p, garlic, jalapenos) w/salad (lettuce, carrot, cucumber) - vinaigrette (evoo & balsamic & dijon mustard)
1/2 avocado (Kate)
1/2 apple (Kate)

Snack:
Turkey meat, handful of roasted pecans (Kate)
Larabar, banana, chicken (2oz.) (Adam)


BINGE on dried fruit/nuts - got to get dinner started earlier.  Lesson learned!

Roasted chicken, broccoli


*Next trip to the grocery store must include vitamin D supplements and LEMONS!  I think Adam and I are both struggling with the plain water:).

Paleo Challenge Day 1

Okay, so I've finally talked my husband into doing a 30 Day Paleo Challenge with me!! Go me:). Although, even though he's agreed to it, it's been non-stop bitching since we started looking over menus and meal planning. Today is day one and he's stuck to it so far, which I know is hard (it's hard for me giving up my 20 crystal light packets/day too!). And he's dead set on this being only 30 days out of his life, not the rest of his life. But I'm just going with it because I hope at the end of the 30 days, he'll feel so much better (like I used to) and want to stick with at least most of it. I'm just so thrilled that we're doing this together.

We both weighed ourselves this morning (not sharing that scary total with the world), and we'll do measurements and photos tonight. Luckily/unluckily enough, we both had our cholesterol screened for life insurance last month, so we have those numbers to go off of if we choose to get our blood work done again in 30 days.

Our meals for today are as follows:

Breakfast:
2 eggs
2.5 slices of bacon
black coffee (or in Adam's case, 4oz. pineapple/OJ)

Lunch:
3-4oz. chicken breast cooked in coconut/olive oil with onions/green peppers
lettuce
shredded carrot (2 mini ones)
clementine (Adam)

Snack:
Apple pie Larabar + clementine (Adam)
possibly smoothie for Adam? Not sure what he'll eat at work this afternoon
Turkey breast (deli meat) + clementine + handful of roasted pecans (Kate)

Snack pt. 2:
2oz. chicken breast 

Dinner:

Tuna steak (olive oil, S&P, lemon juice)
Roasted/steamed green beans with almonds & lemon pepper
blueberries w/balsamic vinagrette, 1/4c. (Kate)

And we both are detoxing from soda, so it's going to be hard. At least I still have my coffee, but I know I need to cut back on this as well.

Oh... and I'm hungry!
